Sweet Potato Casserole

Ingredients

Casserole

  • 3 cups cold mashed sweet potatoes
  • 1 cup sugar
  • ½ cup milk
  • ¼ cup butter
  • 3 eggs
  • 1 tsp salt
  • 1 tsp vanilla

Topping

  • ½ cup brown sugar
  • ½ cup pecans
  • ¼ cup all-purpose flour
  • 2 Tbsp butter

Directions

  1. Beat together mashed sweet potatoes, sugar, milk, butter, eggs, salt, and vanilla. Mix well.
  2. Place mixture in a greased 2-quart baking dish.
  3. For the topping: combine brown sugar, pecans, flour, and butter. Mix until crumbly.
  4. Sprinkle topping over sweet potato mixture.
  5. Bake at 350°F for 45 minutes until heated through and topping is golden.
