Squash Casserole

Cooked squash baked with cheddar, evaporated milk, and saltine crumbs

Ingredients

  • 2 cups cooked squash
  • ¾ cup butter, softened
  • 2 eggs
  • 1 tsp salt
  • ½ tsp pepper
  • 1 cup onion, diced
  • 1 cup shredded cheddar cheese
  • 1 (8 oz) can evaporated milk
  • 2 cups saltine cracker crumbs

Directions

  1. Preheat oven to 350°F.
  2. Mix all ingredients together in a large bowl until well combined.
  3. Pour into a greased baking dish.
  4. Bake at 350°F for 45–60 minutes, until set and golden on top.
