Houston's Spinach Dip

Ingredients

  • ½ purple onion, chopped
  • ½ stick (¼ cup) butter
  • 3 tsp garlic, minced
  • 1 (10 oz) pkg frozen chopped spinach, cooked and drained
  • 8 oz cream cheese, room temperature
  • 8 oz sour cream
  • ¼ cup Parmesan cheese, grated
  • 2 cups artichoke hearts, drained and chopped
  • 8 oz Monterey Jack cheese, cubed, room temperature
  • Salt and pepper to taste

Directions

  1. Preheat oven to 350°F.
  2. Sauté onions and garlic in butter until softened.
  3. Add spinach, cream cheese, sour cream, Parmesan, artichoke hearts, and Monterey Jack cheese.
  4. Mix well until combined. Season with salt and pepper.
  5. Pour into an ovenproof bowl.
  6. Bake at 350°F for 25 minutes until bubbly and golden on top.
  7. Serve warm with bread, crackers, or tortilla chips.
