Ingredients
- ½ purple onion, chopped
- ½ stick (¼ cup) butter
- 3 tsp garlic, minced
- 1 (10 oz) pkg frozen chopped spinach, cooked and drained
- 8 oz cream cheese, room temperature
- 8 oz sour cream
- ¼ cup Parmesan cheese, grated
- 2 cups artichoke hearts, drained and chopped
- 8 oz Monterey Jack cheese, cubed, room temperature
- Salt and pepper to taste
Directions
- Preheat oven to 350°F.
- Sauté onions and garlic in butter until softened.
- Add spinach, cream cheese, sour cream, Parmesan, artichoke hearts, and Monterey Jack cheese.
- Mix well until combined. Season with salt and pepper.
- Pour into an ovenproof bowl.
- Bake at 350°F for 25 minutes until bubbly and golden on top.
- Serve warm with bread, crackers, or tortilla chips.
