Spinach Balls

Ingredients

  • 2 (10 oz) packages frozen chopped spinach
  • 2 cups Pepperidge Farm herb seasoned stuffing, crushed
  • 1 Tbsp black pepper
  • 1 cup grated Parmesan cheese
  • 1 Tbsp granulated garlic
  • 1 cup finely chopped onion
  • 6 eggs, beaten
  • ¾ cup melted butter

Directions

  1. Cook spinach according to package directions and drain very thoroughly, squeezing out all excess moisture.
  2. Add crushed stuffing, black pepper, Parmesan, granulated garlic, and chopped onion. Mix well.
  3. Add beaten eggs and melted butter. Mix until fully combined.
  4. Pinch off about 1 tablespoon of mixture at a time and roll into bite-size balls.
  5. Place on a baking sheet and freeze solid.
  6. Before serving, thaw slightly, then bake at 350°F for approximately 20 minutes (may need longer depending on size).
Tip: Keep a bag of these in the freezer for last-minute entertaining. They go straight from freezer to oven with just a brief thaw.
