Ingredients
- 2 (10 oz) packages frozen chopped spinach
- 2 cups Pepperidge Farm herb seasoned stuffing, crushed
- 1 Tbsp black pepper
- 1 cup grated Parmesan cheese
- 1 Tbsp granulated garlic
- 1 cup finely chopped onion
- 6 eggs, beaten
- ¾ cup melted butter
Directions
- Cook spinach according to package directions and drain very thoroughly, squeezing out all excess moisture.
- Add crushed stuffing, black pepper, Parmesan, granulated garlic, and chopped onion. Mix well.
- Add beaten eggs and melted butter. Mix until fully combined.
- Pinch off about 1 tablespoon of mixture at a time and roll into bite-size balls.
- Place on a baking sheet and freeze solid.
- Before serving, thaw slightly, then bake at 350°F for approximately 20 minutes (may need longer depending on size).
Tip: Keep a bag of these in the freezer for last-minute entertaining. They go straight from freezer to oven with just a brief thaw.
