Slaw with Chicken

Asian-style slaw with crushed ramen noodles, toasted almonds, and a tangy sweet vinegar dressing

Ingredients

Salad

  • 1 bag slaw mix
  • Red cabbage, added to taste
  • 5 green onions, sliced
  • Toasted slivered almonds (2–3 race bags)
  • 1 bag crushed chicken ramen noodles
  • Sunflower seeds (optional)

Dressing (make night before)

  • ½ cup oil
  • 14 Tbsp white vinegar or apple cider vinegar
  • 1½ Tbsp sugar
  • Packet of chicken seasoning (from ramen)
  • Salt and pepper, to taste

Directions

  1. Make the dressing the night before: whisk together oil, vinegar, sugar, chicken seasoning packet, salt, and pepper. Refrigerate.
  2. When ready to serve, combine slaw mix, red cabbage, and green onions in a large bowl.
  3. Add toasted almonds and crushed ramen noodles (and sunflower seeds if using).
  4. Toss with dressing right before serving.
Add the noodles and almonds at the last minute to keep them crunchy.
