Russian Tea Cookies

Buttery pecan balls rolled in powdered sugar — from Fr. Vincent Farhat

Ingredients

  • 1 cup soft butter
  • ½ cup powdered sugar
  • 1 tsp vanilla
  • 2¼ cups flour
  • ¾ cup chopped pecans
  • Additional powdered sugar for rolling

Directions

  1. Preheat oven to 400°F.
  2. Beat butter, powdered sugar, and vanilla together well, then hand mix in flour and pecans.
  3. Roll into balls and place on an ungreased baking sheet.
  4. Bake 10 to 12 minutes until set but not browned.
  5. While still warm, roll in powdered sugar. Let cool completely, then roll in powdered sugar again.

Tip: Roll twice in powdered sugar — once warm (it melts in), once cool (it coats).
