Light, hollow, golden popovers β€” crispy outside, airy inside

Ingredients

  • 2 eggs
  • 1 cup milk
  • 1 Tbsp cooking oil
  • 1 cup all-purpose flour
  • ΒΌ tsp salt

Directions

  1. In a blender, combine milk, eggs, oil, and salt. Blend for approximately 30 seconds until smooth.
  2. Add the flour and blend again until smooth.
  3. Grease a popover pan and fill cups halfway full.
  4. Bake at 400Β°F for 40 minutes.
  5. Prick each popover to allow steam to escape, then turn oven off and leave for 5 more minutes.
  6. Serve immediately.
Tip: Do not open the oven during baking β€” the steam is what makes them pop!
