Ingredients
- 4 cans whole tomatoes
- Juice from 1 can whole tomatoes
- 10 garlic cloves
- 3 shallots, sliced
- ½ head parsley, chopped
- 4 basil leaves (3 chopped, 1 whole)
- 1 cup olive oil
- 2 pkgs Sweet'N Low
- ½ can tomato paste
- 1 medium can tomato sauce
- 1 cup shredded Parmesan
- 2 Tbsp pepper
- 1 Tbsp salt
Directions
- Sauté garlic and shallots in olive oil until softened.
- Take white tips off whole tomatoes and purée in a food processor. Add purée to the sauté pan.
- Add chopped and whole basil, parsley, Sweet'N Low, salt, pepper, tomato sauce, and tomato paste.
- Simmer, stirring occasionally, until sauce thickens and flavors meld.
- Add Parmesan right before serving. Add extra pepper and garlic powder if needed.
Adding Parmesan right before serving keeps it fresh and adds a bright, salty finish to the sauce.
