New York Spaghetti Sauce

Nan's meatless spaghetti sauce — whole tomatoes puréed with garlic, shallots, fresh basil, and olive oil

Ingredients

  • 4 cans whole tomatoes
  • Juice from 1 can whole tomatoes
  • 10 garlic cloves
  • 3 shallots, sliced
  • ½ head parsley, chopped
  • 4 basil leaves (3 chopped, 1 whole)
  • 1 cup olive oil
  • 2 pkgs Sweet'N Low
  • ½ can tomato paste
  • 1 medium can tomato sauce
  • 1 cup shredded Parmesan
  • 2 Tbsp pepper
  • 1 Tbsp salt

Directions

  1. Sauté garlic and shallots in olive oil until softened.
  2. Take white tips off whole tomatoes and purée in a food processor. Add purée to the sauté pan.
  3. Add chopped and whole basil, parsley, Sweet'N Low, salt, pepper, tomato sauce, and tomato paste.
  4. Simmer, stirring occasionally, until sauce thickens and flavors meld.
  5. Add Parmesan right before serving. Add extra pepper and garlic powder if needed.
Adding Parmesan right before serving keeps it fresh and adds a bright, salty finish to the sauce.
