Molten Chocolate Cakes

Ingredients

  • Semi-sweet chocolate, chopped
  • Butter
  • Eggs
  • Egg yolks
  • Powdered sugar
  • All-purpose flour
  • Vanilla extract

Directions

  1. Preheat oven to 375ยฐF. Butter ramekins or small oven-safe cups well and dust lightly with cocoa powder.
  2. Melt chocolate and butter together, stirring until smooth. Let cool slightly.
  3. Beat in eggs and egg yolks one at a time until well combined.
  4. Stir in powdered sugar and flour until just combined. Add vanilla.
  5. Divide batter among prepared ramekins.
  6. Bake 10โ€“12 minutes โ€” the edges will be set but the center should still jiggle slightly.
  7. Run a knife around the edges and invert onto plates. Serve immediately.
Key tip: Do not overbake. The molten center is the whole point โ€” pull them when the edges are firm but the middle still moves.
