Ingredients

Single Batch

  • 3 Tbsp butter
  • 3 Tbsp flour
  • Pepper, to taste
  • 3 cups milk
  • 2 cups cheese
  • 1½ cups macaroni noodles

  • 12 Tbsp butter
  • 12 Tbsp flour
  • 4 tsp pepper
  • 8 cups milk
  • 8 cups cheese (4 cups Velveeta + 2 cups mild + 2 cups cheddar)
  • 6 cups noodles

Directions

  1. Cook macaroni noodles according to package directions. Drain and set aside.
  2. In a large pot, melt butter over medium heat. Whisk in flour and pepper to form a roux.
  3. Gradually add milk, whisking constantly until smooth and thickened.
  4. Add cheese and stir until fully melted and creamy.
  5. Fold in cooked noodles. Serve immediately or transfer to a baking dish to keep warm.
