Giant Popovers

Martha Dixon's impressive oversized popovers — sizzling and spectacular

Ingredients

  • 2 eggs
  • 1 cup milk
  • 1 cup flour
  • ¼ tsp salt

Directions

  1. Mix eggs and milk in a blender for 2 minutes.
  2. Add flour and salt, blending until smooth.
  3. Heat oven to 450°F. Grease cups and preheat them in the hot oven until they sizzle.
  4. Fill preheated cups half full with batter.
  5. Bake for 25 minutes at 450°F.
  6. Lower oven to 350°F and bake 15 to 20 minutes more until deep golden.
  7. Serve immediately.
Key technique: The cups must be sizzling hot when you add the batter — this is what makes them giant!
