Egg Bake

Ida's make-ahead layered egg bake — bread, ham, cheese, and vegetables in a creamy egg custard — serves 12

Ingredients

  • 1 loaf white bread (crusts removed)
  • ¼–½ lb shaved ham
  • ¼–½ lb cheese of choice
  • 10 oz vegetables (mushrooms, onions, etc.)
  • Butter (to grease 13×9 pan)
  • 3 cups milk
  • 6 eggs
  • ½ tsp salt
  • ⅛ tsp pepper

Directions

  1. Butter a 13×9 pan. Layer bread first, then meat, cheese, vegetables, and end with bread on top.
  2. Mix together 3 cups milk, 6 eggs, salt, and pepper.
  3. Pour custard mixture over bread layers. Refrigerate overnight.
  4. Preheat oven and bake at 350°F covered for the first 1½ hours.
  5. Uncover and bake 2–2½ hours total. Check center to make sure a knife comes out clean.
Make the night before — the overnight soak is what makes this bake so custardy and rich.
