Cinnamon Bread Pudding

Chef Hilton's rich bread pudding with heavy cream and warm cinnamon — serves 12

Ingredients

  • ¾ loaf white bread
  • 1¾ cups heavy cream
  • 1¾ pints whole milk
  • 5 eggs, whipped
  • 1½ cups sugar
  • 1½ Tbsp vanilla
  • 2 tsp cinnamon

Directions

  1. Preheat oven to 325°F. Cut bread into cubes.
  2. Combine heavy cream, milk, eggs, sugar, vanilla, and cinnamon.
  3. Mix with bread cubes until bread is moist — note: do not allow bread to break apart.
  4. Spray a 13×9 baking pan with non-stick spray.
  5. Pour mixture into prepared pan.
  6. Bake at 350°F for one hour.
  7. Cool completely before serving.
Key tip: Fold the custard mixture gently into the bread — keeping the cubes intact gives the pudding great texture.
