Ingredients
- 6–7 chicken breasts, cut in bite-size pieces
- 3 hot cherry peppers (seeds removed), cut small
- 3–4 sweet peppers, cut up
- 1 large onion, sliced in rings
- Granulated garlic, to taste
- Salt and pepper, to taste
- Fresh basil, to taste
- 1 can whole tomatoes
- 2 cans crushed tomatoes
- 2 handfuls grated cheese (Parmesan or Romano)
- Rigatoni pasta
Directions
- Cut chicken into bite-size pieces.
- Remove seeds from hot cherry peppers and cut into small pieces.
- Sauté sweet peppers and onion with chicken. Add hot cherry peppers, granulated garlic, salt, pepper, and fresh basil.
- Sauté everything together until chicken is cooked through.
- Add one can whole tomatoes and two cans crushed tomatoes.
- Cook for 45 minutes on medium-low heat.
- Stir in two handfuls of grated cheese.
- Cook rigatoni according to package directions. Drain, top with sauce, and serve.
