Chicken Riggies

Spicy Utica-style chicken and rigatoni with cherry peppers and tomato sauce

Ingredients

  • 6–7 chicken breasts, cut in bite-size pieces
  • 3 hot cherry peppers (seeds removed), cut small
  • 3–4 sweet peppers, cut up
  • 1 large onion, sliced in rings
  • Granulated garlic, to taste
  • Salt and pepper, to taste
  • Fresh basil, to taste
  • 1 can whole tomatoes
  • 2 cans crushed tomatoes
  • 2 handfuls grated cheese (Parmesan or Romano)
  • Rigatoni pasta

Directions

  1. Cut chicken into bite-size pieces.
  2. Remove seeds from hot cherry peppers and cut into small pieces.
  3. Sauté sweet peppers and onion with chicken. Add hot cherry peppers, granulated garlic, salt, pepper, and fresh basil.
  4. Sauté everything together until chicken is cooked through.
  5. Add one can whole tomatoes and two cans crushed tomatoes.
  6. Cook for 45 minutes on medium-low heat.
  7. Stir in two handfuls of grated cheese.
  8. Cook rigatoni according to package directions. Drain, top with sauce, and serve.
