Broccoli and Cauliflower Salad

Crunchy broccoli and cauliflower florets with raisins, almonds, and a sweet-tangy mayo marinade

Ingredients

  • 1 head broccoli and cauliflower florets
  • 1 cup white raisins
  • ½ cup finely chopped onions
  • ½ cup toasted almonds
  • Marinade:
  • ¼ cup white vinegar
  • ½ cup sugar or Sweet'N Low
  • 1 cup mayonnaise

Directions

  1. Combine broccoli and cauliflower florets, white raisins, and chopped onions in a large bowl.
  2. Whisk together white vinegar, sugar (or Sweet'N Low), and mayonnaise to make the marinade.
  3. Toss salad with marinade and refrigerate overnight — everything except the toasted almonds.
  4. Add toasted almonds just before serving.
Add the almonds right before serving to keep them crunchy.
