Russian Tea Cookies

Soft butter, powdered sugar, vanilla, flour & chopped pecans — baked at 400° and rolled in powdered sugar

Ingredients

  • 1 cup soft butter
  • ½ cup powdered sugar
  • 1 tsp vanilla
  • 2¼ cups flour
  • ¾ cup finely chopped pecans
  • Additional powdered sugar for rolling

Directions

  1. Cream together butter, powdered sugar, and vanilla until light and fluffy.
  2. By hand, mix in flour and chopped pecans until a soft dough forms.
  3. Roll into 1-inch balls.
  4. Bake at 400°F for 10–12 minutes until set but not browned.
  5. While still warm, roll each cookie in powdered sugar.
  6. Cool completely, then roll in powdered sugar a second time.
Tip: Rolling twice — once warm and once cool — gives a perfect snowy coating. These keep well in a tin for 2 weeks.
