Ingredients
- 1 cup soft butter
- ½ cup powdered sugar
- 1 tsp vanilla
- 2¼ cups flour
- ¾ cup finely chopped pecans
- Additional powdered sugar for rolling
Directions
- Cream together butter, powdered sugar, and vanilla until light and fluffy.
- By hand, mix in flour and chopped pecans until a soft dough forms.
- Roll into 1-inch balls.
- Bake at 400°F for 10–12 minutes until set but not browned.
- While still warm, roll each cookie in powdered sugar.
- Cool completely, then roll in powdered sugar a second time.
Tip: Rolling twice — once warm and once cool — gives a perfect snowy coating. These keep well in a tin for 2 weeks.
